Do you ever have over ripe bananas lying in your kitchen? Hold on, don’t throw them away just yet as they can be used to make these delicious banana walnut muffins. The best thing is, it’s simple to make with ingredients you probably already have in your pantry! This combination of the fluffy banana muffin and the crunchy chopped walnuts will be sure to leave you wanting for more. Let’s start!

1. Ingredients
Dry mixture
- 1.5 cups (250 grams) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 100 grams walnuts, chopped
- 1 teaspoon cinnamon powder (optional)
Wet mixture
- 3 large well-ripe bananas, mashed
- 80 grams salted butter, melt
- 1 egg, lightly beaten
- 100 grams sugar
- 1/2 teaspoon vanilla extract
2. Directions
- Preheat your oven at 375 F (190 C) for 15 minutes.
- Dry mixture: whisk the flour, baking soda, baking powder and cinnamon powder together. Put aside.
- Wet mixture: mix all bananas, butter, egg, sugar and vanilla extract in a separate bowl and stir well.
- Add dry mixture into the wet mixture. Stir until well combined and there are no chunks of flour left. Then add in chopped walnuts.
- Grease the muffin liners with butter or cooking oil.
- Scoop the mixture into the liners around ⅔ of the way, leaving room for it to rise in the oven.
- Bake at 375F for 20 minutes until the muffins turn a light brown.
